Course Description

In this one-year program, students learn to effectively prepare, cook and present a wide range of ingredients according to industry standards.

Particular importance is given to the work safety measures and requirements, and the health regulations governing the preparation and service of food products.

Since most related jobs in the Northern Ontario are found in small and medium sized, independent restaurants, the program also deals with the versatile skills a cook needs to ensure the profitability of a business. The following items, among others, are an integral part of the curriculum: the cost of food, portion control, reducing waste, inventory and ordering, and basic kitchen management. 

Finally, since customers these days are more concerned with healthy eating and fast service, students learn about the preparation of quick, unique dishes that are low in sodium and cholesterol.
